Description

Ras malai (রস মালাই) consists of flattened balls of Chhana soaked in malai (Clotted Cream) flavored with cardamom. Milk is boiled and a bit of vinegar or lime juice is added to split it. The whey is discarded and the milk solids are drained, cooled, and kneaded into a dough. The dough is divided into small balls and the balls are cooked in hot water with a bit of rose water added. The balls are then cooked in milk with saffron, pistachios, and kheer as stuffing.

রসমালাই দক্ষিণ এশিয়ার বাংলাদেশ, ভারত, পাকিস্তান, নেপাল এর একটি জনপ্রিয় মিষ্টি খাদ্য। ছোট ছোট আকারের রসগোল্লাকে চিনির সিরায় ভিজিয়ে তার উপর জ্বাল-দেওয়া ঘন মিষ্টি দুধ ঢেলে রসমালাই বানানো হয়।
